Good on its own, good with Vanilla Ice Cream!

Makes 1 large loaf

(Total Time: 1 hour 10 minutes)


2 Cups Plain Flour

1 Cup Sugar

2 Tsp Ground Cinnamon

2 Tsp Baking Soda

1 Tsp Salt

1 Cup Vegetable Oil

2 Cups Mashed Ripe Bananas

1 Tsp Vanilla Extract

½ Cup Cranberries

½ Cup Flaked Coconut

3 Eggs, Beaten


  1. Preheat oven to 350 degrees. Grease 2 x 8 inch loaf tins.
  2. In a large bowl, stir together the flour, sugar, cinnamon, salt, vegetable oil, mashed bananas, vanilla extract, cranberries, flaked coconut and eggs. Mix well.
  3. Pour into prepared tins.
  4. Bake for one hour (or less if small pans).  Allow the cake to sit for 10 minutes.
  5. Enjoy!
