Makes 1 large loaf
(Total Time: 1 hour 10 minutes)
2 Cups Plain Flour
1 Cup Sugar
2 Tsp Ground Cinnamon
2 Tsp Baking Soda
1 Tsp Salt
1 Cup Vegetable Oil
2 Cups Mashed Ripe Bananas
1 Tsp Vanilla Extract
½ Cup Cranberries
½ Cup Flaked Coconut
3 Eggs, Beaten
- Preheat oven to 350 degrees. Grease 2 x 8 inch loaf tins.
- In a large bowl, stir together the flour, sugar, cinnamon, salt, vegetable oil, mashed bananas, vanilla extract, cranberries, flaked coconut and eggs. Mix well.
- Pour into prepared tins.
- Bake for one hour (or less if small pans). Allow the cake to sit for 10 minutes.
