Two local organic sourdough bakers alternating at our monthly markets!
The March Market welcomed Katie of ‘The Wonky Loaf’ who brought an array of organic sourdoughs to the market.
A Palmwoods parent of three hungry boys, Katie, originally from Liverpool UK, began experimenting with baking five years ago after enrolling in a short course in sourdough technique.
After much experimentation with different flours and ingredients Katie has come to a point of “wonky” perfection where her sourdough loaves must be up there with the best. She is non-compromising in her sourcing of the best quality ingredients, recently discovering the Gunnandale Mill in NSW that both grows and mills its organic wheat. Katie explains that the fermentation process of sourdough when done properly sees the protein in wheat broken down to a much more digestive friendly state.
The range includes a traditional loaf, a seedy loaf, a kalamata olive loaf and a divine spiced fruit loaf made with organic fruits pre-soaked in tea making the bread tangy and moist.’
Our April Market welcomes Bernard and family from Crystal Waters Bakery with their organic sourdoughs, and pastries with a French twist. Ooh la la!
